Arya threatens to wear Sansa's face and impersonate her. Really! So no one is expected to notice that Sansa is a suddenly a whole head shorter. Okay, she stood on a stool to impersonate Walder Frey, but come on, people!

Arya said that when she wears a face she's "in their skin." I take from that that she acquires their physical shape, including height, too.

When Jaqen (sp?) wore a face when he turned Arya blind, he changed size. So i guess so. I mean, how would skin make them talk like that person? It's magic, mane.

I think they have the power to create an illusion rather than physically change size. This would deceive all the senses into believing what they see.
